The availability of new potato cross-breeds for industrial processing

چکیده
Under the conditions of Republic North Ossetia-Alania, an assessment availability new cross-breeds their own breeding to industrial processing French fries according morphological, biochemical and consumer quality indices has been carried out. It specified that requirements for tubers on morphological grounds production are satisfied by 10.11/53 10.11/804, characterized elongated form tuber, flat smooth surface, shallow depth eyes. According finished product we should select cross-breed 10.11/1787 due faintly darkening pulp frozen semi-finished product, attractive appearance fries, good taste smell. Cross-breeds 10.11/804 be recommended cumulative fries.
